Family dishes for the future

Sometimes a family recipe is written down, sometimes it lives on through a flavour, a way of cooking or a memory. But what happens if certain ingredients become less available in years to come?

In this edition, Maureen de Jong and Melissa Korn of Culinary Roots join chef Servé Dierdorp of Koki Putih to explore how beloved Indo-Dutch dishes can be passed on. They give existing recipes a contemporary form without losing their recognisable flavours.

About Culinary Roots

Culinary Roots is an initiative by culinary artist Maureen de Jong and food and culture specialist Melissa Korn. Through the programme, participants explore their family history through a dish, viewing the kitchen as a living archive of stories, flavours and rituals. Their discoveries come together in an artistic experience centred on food, memory and being together.

About Koki Putih

Koki Putih is a concept by chef Servé Dierdorp and host Jack Wolsten. Drawing on Indonesian traditions, family recipes and childhood memories, they use local ingredients to create new classics. Eating together and the stories behind the dishes are at the heart of their work.
